Myriam Bilbault – Cheese Master at Cheese Club
Cheese expert with a lifelong passion for the industry. With 20 years of experience, she has grown up in the field, winning 1st place in the Rabelais des Jeunes Talents competition (under 26 category) and 3rd place in the Meilleur Fromager de France competition. She has managed cheese retail departments in three shops across HK and acts as Cheese Master for Cheese Club in events, buffets preparation, masterclasses, and workshops. Passionate by the world of cheese, Myriam is a landmark in her field.
Damien Fleury - Managing Director & Founder of The Swiss Wine Store
Originally from Swiss Jura Damien started his career in the family watchmaking business before specializing in High-Tech 3D Computer Graphics, a pioneer technology at the time. Damien made a successful career working for the 3D market leader based in North America for a decade before returning to Switzerland in early 2000's and developing a passion for Swiss wines while working as a 3D Consultant.
Following new inspirations Damien founded The Swiss Wine Store (TSWS) in Hong Kong in 2012. TSWS proposes a selection of carefully chosen high-quality wines made by some small family and boutique wineries with a focus on biodynamic production in Switzerland.
Today Damien devotes himself to bringing and sharing these lesser-known wine gems from Switzerland to Hong Kong and the Asia Region via TSWS platform – online shop, tastings, workshops, and partnerships formed with fine local and Michelin star tables.
